Formulation and Acceptability of Nutri-Enriched Canton

Abstract

This study aimed to prepare a nutri-enriched canton using the bangus bone powder. Specifically, it aimed to describe the quality attributes of the nutri-enriched canton, determine its acceptability, the proximate composition analysis,the cost and return of the enriched canton andthe shelf-life of the product.

            Bangus scrap were taken from Anjos farm in San Fabian Pangasinan, washed,boiled with calamansi and ginger,  pressure cooked for 90 minutes at 15 psi.drained,sun dried, partially dried bone is further dried in oven and pulverized. Three formulation/treatmentswere prepared. Treatment 101 (15 %  bone powder+ 85% flour), Treatment 201 (20 % flour+80% flour), Treatment 301 (25% bone powder+75% flour), Treatment 401(control plain flour). The products were prepared by weighing and mixing the ingredients, knead to form a dough, further knead and cut in noodle machine,boiled, drained and fried. It was evaluated by the panelists selected from the faculty, staff and college students from DMMMSU- Institute of Fisheries. A hedonic rating with a scale of 1-9 was used in the acceptability test and unstructured evaluation sheet was used in the descriptive analysis of the product.

            Results of the study showed that nutri-enriched canton is cream in color, odor,and tastewere slightly perceived and texture is crunchy.  In terms of acceptability, Treatment 301 has the highest acceptability followed by Treatment 201, Treatment 101 and Treatment 401(control). Analysis of Variance showed no significant difference (P 0.05) among the treatments used. The most accepted formulation has an ROI of 42%. In terms of shelf life, the nutri-enriched canton is 3 months. The proximate composition of the canton for 100 g contains 2.57g ash, moisture 7.31 g, Crude protein 12.23gand crude fat 28.26g.

            Treatment 301 is recommended for commercialization. It can be a livelihood project or an additional income to those who are engaged in bangus deboning activity. Likewise, the utilization of scraps will protect the environment from pollution.
